Zucchini Dessert Bread Recipe
Sweet and satisfying dessert or afternoon snack
Preparation time: 30 minutes |
Makes: 1 loaf (9"x5") |
Mix and set aside:
1 cup unbleached white flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon ground cloves
1/4 teaspoon powdered ginger
1/4 teaspoon salt
In a large bowl, mix:
1/3 cup canola or sunflower oil
2 tablespoons fresh orange juice
1/2 cup maple syrup (use 3/4 cup for a sweet tooth)
1 egg
1 cup zucchini (with or without peel), grated
1/3 cup raisins or unsweetened, shredded coconut
3 tablespoons walnuts, chopped
Mix dry ingredients into wet ones. Pour into oiled 9"x5" loaf pan. Bake at 350° for 40–45 minutes or until toothpick inserted into center comes out clean. Cover top with foil if it starts to brown too quickly (to keep it from burning).
Serving idea: Very nice with your favorite whipped topping.
