“Neat Balls”
A delicious vegetarian substitute for family style meat balls!
Makes: 24 balls

Preheat oven 325°
Grind in food processor in succession:
1 cup Sunflower seeds
3/4 cup onion, minced
1 clove garlic, peeled
1 stalk celery, without leaves
1/2 cup cooked grains
Combine in a bowl:
2 eggs
1/4 cup pesto
(blended olive oil, fresh basil, garlic, salt, black pepper)
2 tablespoons fresh parsley, minced
1 cup bread crumbs
1 teaspoon Italian Herbs blend
1 teaspoon salt
1/2 teaspoon black pepper
parmesan to taste, optional
Add ground ingredients to bowl with eggs and bread crumbs mixture. Add more bread crumbs or seeds if needed to create firm consistency. Roll into balls 1" in diameter. Put on oiled baking sheet and bake for 45 minutes. Turn balls every 15 minutes to cook evenly and avoid sticking and burning.
Serving idea: Good with pasta and Sweet Tomato Sauce, Lemon Tomato Sauce or Tomato Pizza Sauce.
Variation: Instead of sunflower seeds, substitute an equal amount of walnuts.
