Tofu Salad Recipe
Tofu Salad
Excellent, low-fat snack or side dish. Also nice for sandwiches. Great vegetarian alternative to tuna salad.
Preparation time: 15 minutes |
Serves: 6 |
Blend in a food processor until crumbled:
1 pound firm tofu (not silken)
Set aside in mixing bowl.
Finely chop in food processor:
1 medium carrot, peeled and cut into chunks
Mix with tofu.
Add to the tofu-carrot mixture:
1 celery stalk, minced by hand
3 tablespoons olive oil
3 tablespoons fresh lemon juice
3 tablespoons tamari or Bragg Liquid Aminos
Mix all ingredients together. Refrigerate for 30 minutes to 2 hours before serving to allow flavors to be absorbed.
