Seitan Recipe
Setian is wheat gluten, made of whole-wheat flour and water. We use Bob’s Red Mill “Vital Wheat Gluten”. Wheat gluten is easy to digest, and has a high protein content, making it a healthy addition to a vegetarian diet. It has a chewy, meat-like texture and can be boiled, baked, stir-fried, sliced for sandwiches or added to soups and stews. Though it can be found at natural food stores and some supermarkets, homemade seitan is less expensive and tastes a lot better. Look for wheat gluten flour at your local natural food store.

Mix in a bowl, to create a gluten dough:
1 cup wheat gluten flour like Bob’s Red Mill
¾ cup fresh water
Bring to a boil in a large pot:
2 cups fresh water
¼ cup tamari or Braggs
Gluten dough
1 ½ inch fresh ginger root, sliced
