Red Pesto Pasta Salad Recipe
A festive, colorful, new creation that everyone likes.
Preparation time: 40 minutes |
Serves: 8 |
Pour 2 cups boiling water over:
1/2 cup sundried tomatoes
Let soak for 15 minutes, and set aside.
Cook according to package instructions:
1 package of Penne Pasta (16 ounces)
While cooking pasta, place in food processor, chop and blend lightly:
3 cloves garlic, peeled
soaked and drained sundried tomatoes (save liquid)
1/4 cup liquid from tomatoes
1/2 tablespoon balsamic vinegar
1/2 tablespoon red wine vinegar
1/4 teaspoon crushed dried red chile pepper
1/2 cup sliced olives
1 tablespoon dried thyme
1 tablespoon dried rosemary
1/2 cup olive oil
Place in a bowl and mix :
1 cup parmesan, finely grated
1 cup fresh Italian parsley, chopped
3 tablespoons fresh lemon juice
1 cup sliced olives
1 teaspoon salt
cooked pasta
blended ingredients from food processor
Serve at room temperature.
