Quinoa Cauliflower Recipe
A beautiful and delicious blend of grain and veggies.
Serves: 6 |
Ingredients:
1 head of cauliflower, washed and chopped into lovely ‘flowerets’
2 cups uncooked quinoa
4 cups boiling water
2 TBSP no salt veggie broth
1 TBSP neutral tasting oil
3 carrots peeled and grated
1 cups chopped fresh parsley
Directions:
Rinse and drain quinoa very well. Add veggie broth and oil to boiling water and stir. Add quinoa, stir and reduce heat to simmer. Cover and simmer until water absorbed (between 15 and 20 minutes). Let sit 5 minutes, then fluff with fork
While quinoa is cooking, steam cauliflower until cooked to your liking.
Mix grated carrots and parsley with quinoa. Gently mix in cauliflower – eh voila! A delicious, high protein dish.
Great on its own, but superb when served with Creamy Savoury Tofu Sauce!
