Magic Vegetable Topping Recipe
Great over Plain Rice, mashed potatoes, and pasta.

Preparation time: 20 minutes |
Makes: 1 1/2 cups |
Sauté until onions are golden brown:
1-2 tablespoons canola or sunflower oil
1-2 tablespoons olive oil
1 medium red onion,minced
Add and sauté for 5 minutes:
2 stalks celery, minced>
1 medium carrot, peeled and minced
Add:
1/2 cup water
Cover and simmer for 10 minutes. Then add:
1 medium soft tomato, cubed
1/2 teaspoon salt
1 teaspoon dried oregano
Cover and simmer for 5 minutes longer. Serve immediately.
Variation:
Replace the celery with half a parsnip.
