Lemon Tomato Sauce Recipe
Tangy tomato sauce. Great with Stuffed Cabbage..
Preparation time: 15 minutes |
Makes: 1¼ cups |
Sauté until onions are translucent or slightly golden:
2 tablespoons canola or sunflower oil
½ cup onions, minced
Add:
1½ cups ripe, soft tomatoes, minced
Mix tomatoes and sautéed onion, coating the tomatoes completely with onions. Add:
¼ cup apple juice
1 tablespoon fresh lemon juice
Simmer for 5 minutes. Place in a blender and blend until smooth. Pour into serving container and add salt and black pepper to taste (start with ½ teaspoon salt and a pinch of black pepper).
