Basic Granola Recipe
Whenever we smell a tantalizingly yummy aroma in the kitchen, we realize it’s our granola in the oven! Our guests love this recipe. After mastering the basic technique, you can experiment by adding different ingredients to create your own variations.
Basic Granola
(Served at The Expanding Light Retreat)

Mix in a bowl
1/3 cup maple syrup or honey
1/3 cup sunflower oil
1 ½ t. vanilla extract
Add, and stir until coated with the liquid:
4 cups rolled oats
Spread mixture on 2 baking sheets (a thin layer of mixture on each tray). Bake at 350 for about 10 min. Remove from oven and stir and turn thoroughly. Return to oven for another 10 minutes, or until golden in color. Take out and immediately, while still hot mix in:
1 t. cinnamon
¼ t. nutmeg
¼ t. allspice
Allow granola to cool completely on the baking tray, then store in an airtight container, at room temperature.
Variations:
Before baking, you can add:
1/8 -1/2 cup sunflower seeds or/and sesame seeds
½ cup nuts such as almonds or walnuts, whole or chopped
After baking:
Immediately after taking the granola out of the oven, sprinkle over it and fold in:
¼ to ½ cup raisins, chopped dates, or other unsulfured dried fruit (figs, ginger, dates, cranberries etc…)
