Vegetable Tofu Patties Recipe
Delicious and creative way to enjoy tofu (also a substitute burger for hamburger lovers).

Makes: : 8-10 patties |
Sauté until onions are golden brown:
2 tablespoons canola or sun?ower oil
1 medium onion, minced
Add and sauté for 5 minutes:
1 celery stalk, minced
1 medium carrot, peeled and grated
Add and sauté for 3 minutes:
1 teaspoon salt
1 teaspoon garlic powder
2 cups fresh spinach, minced
Set aside.
Meanwhile, blend in food processor until crumbled.
11/2 pounds ?rm tofu (not silken)
Mix all ingredients together. Add to the mixture:
1/4 cup sesame seeds, roasted
Form mixture into patties (see Appendix D, page 188). Bake on oiled baking tray at 350° for 20–30 minutes until golden. (A 10"x15" baking tray can hold 8 patties.)
