Quinoa Salad Recipe
A light and nutritious salad. A feast for the eyes and the taste buds.
Preparation time: 20 minutes |
Serves: 4-5 |
Bring to a boil:
2 cups water
Add:
1 cup quinoa (rinsed 3 times)
1 tablespoon powdered vegetable broth
Cover and simmer until all water is absorbed. Let sit covered for 5 minutes, then fluff.
While quinoa is cooking, saute in a pan until golden:
2 tablespoons canola oil
1 tablespoon olive oil
1 cup onion or leek, minced
Add and saute for 5 minutes:
1 cup red bell pepper
3/4 cup carrot, peeled and grated
2 tablespoons poppy seeds
Mix cooked quinoa with sauteed vegetables and add:
1 green onion, minced
1/3 cup fresh parsley, minced
2 tablespoons fresh lemon juice
1 teaspoon Spike
1/2 teaspoon salt
Serve warm or cold.
