Potato-Garlic Spread Recipe
Great butter substitute. Delicious on Basic Whole Wheat Bread, Whole Wheat Sesame Crackers.
Preparation time: 20 minutes Cooking time: 30 minutes Makes: 3 cups |
Serves: 6-8 |
Preheat oven to 400°.
Roast:
1 garlic bulb (whole and not peeled)
Wrap garlic in foil and roast at 400° for approximately 30 minutes until soft. Remove from oven and let cool.
Meanwhile, boil until soft:
3 russet potatoes, peeled and cubed
Strain and save water from cooking. Let potatoes cool for 5 minutes.
Place in a food processor and blend until smooth:

3 tablespoons olive oil
1 tablespoons dried chives(optional)
2 tablespoons fresh lemon juice
1 teaspoon salt
Take garlic out of foil and squeeze garlic into mixture in food processor. (It will be like a paste.) Blend together until smooth. Add a small amount of cooking water if you prefer a thinner consistency
