Burdock Root and Carrots Recipe
A new variation of this little known root vegetable- a nutritious and colorful side dish!
Burdock Root and Carrots
Prep time: 5 minutes
Cooking time: 20 minutes
Serves 2
Scrub thoroughly in water or peel, then cut into half rounds:
1 15" burdock root* - approx. 1/2 cup
Place in a skillet and sauté for 2 minutes:
1-2 tablespoons of sesame oil
2 tablespoon of black or white sesame seeds
Add burdock and sauté for 3 minutes.
Then add:
1 medium carrot, cut on the diagonal
for sauté for 3 minutes.
Add:
1/2 cup of water
cover and simmer for approx. 10 minutes or until water is absorbed. Drizzle tamari or Braggs Aminos over vegetables. Cover and Let sit to absorb flavors for 5-10 minutes. Taste and add more tamari or braggs if needed.
*You can find Burdock Root at most Asian grocery stores and some health fod markets.
Serve with tofu/tempeh/seitan or other Asian vegetable dishes!
