Walnut Balls Recipe
A delicious substitute for meat balls.

Preparation time: 35 minutes
Preheat oven: 350°
Baking time: 45 minutes

 

Makes: 20 balls
All Year


Grind in food processor in succession:
    1 cup whole walnuts
    3/4 cup onion, minced
    1 clove garlic, peeled
    1 stalk celery, without leaves

Combine in a bowl:
    2 eggs
    2 tablespoons fresh parsley, minced
    1 cup bread crumbs (or garbanzo flour for gluten free option)
    1 teaspoon salt

Add ground ingredients to bowl with eggs and bread crumbs mixture. Add more bread crumbs or nuts if needed to create firm consistency. Roll into balls 1" in diameter. Put on oiled baking sheet and bake for 45 minutes. Turn balls every 15 minutes to cook evenly and avoid sticking and burning.

Serving idea:
Good with pasta and Sweet Tomato Sauce, Lemon Tomato Sauce or Tomato Pizza Sauce.

Variation:
Instead of walnuts, substitute an equal amount of sunflower seeds.
