Apple Chutney Recipe
A nice relish served as an accent to Kitchari or Indian food in general.

Preparation time: 15 minutes
Cooking time: 10-15 minutes

 

Makes: 2 cups
Autumn, Winter

Place in a pot:
    11/2 pounds green or red apples, peeled and sliced (about 3 apples)
    1 tablespoon fresh ginger, peeled and grated
    1/2 cup orange juice
    1 teaspoon cinnamon
    1 teaspoon ground cloves
    1 teaspoon salt
    1/2 cup water
    1 pinch cayenne

Bring to a boil and simmer until apples are soft (approximately 10–15 minutes). Add:
    1/4 cup honey

Let cool for 5 minutes. Blend in a food processor until smooth. Serve warm or cold.
